Ingredient Notes

  • Jiffy Corn Muffin Mix – The Jiffy mix adds classic cornbread flavor to the Jiffy Cornbread casserole, but you can use any preferred cornbread mix.
  • Creamed Corn – Creamed corn contributes to the creamy texture, and you can opt for the low-fat version if you prefer.
  • Whole Kernel Corn – Drained canned corn is convenient, but frozen or fresh corn can be used for a slight textural variation.

  • Large Egg – A beaten egg helps bind the ingredients together.
  • Onion Powder and Garlic Powder – These pantry staples offer a convenient way to add flavor, but fresh onions and garlic can be used for a stronger taste.

Pro Tips

  • You can use frozen corn instead of canned corn if you like.
  • Double the recipe and store half of it in the freezer for a busy weeknight when you need dinner in a hurry.
  • If you do not have (or do not like) cream-style corn, you can use whole corn kernels. Just use two cans of regular kernel corn instead.
  • You can use any cornbread mix. It does not have to be Jiffy Cornbread Mix. In fact, you can use your homemade cornbread recipe.
  • If you use unsalted butter, you can add a dash of salt if you like.
  • Here are some of my favorite things to use to make this recipe. How many of these do you have already?

Delicious Variations

  • Creamed corn casserole – Using creamed corn makes your dish creamy, but adding some cream cheese would make it incredible.
  • Mexican cornbread casserole – Add a tablespoon of taco seasoning for Mexican cornbread casserole, or make a taco cornbread casserole with seasoned ground beef, taco seasoning, corn, and a layer of cornbread batter, all baked together
  • Cowboy cornbread casserole – boasting flavors like savory ground beef, wholesome beans, and a fusion of zesty southwestern spices. This casserole is fit for a cowboy dinner.
  • Spicier dish – If you are a fan of spicy foods, add a teaspoon of chili powder and a pinch of red pepper flakes, cayenne pepper, or diced green chilies.
  • Make it a meal – Feel free to add some meat mixture to make this a meal. Ground turkey, chicken, or pork would be awesome.
  • Got beans – Why not add beans to make this a heartier meal? Some great ideas include pinto beans, kidney beans, chili beans, and black beans.
  • Add veggies – You do not have to stop with corn. You can add as many veggies as you like, such as diced tomatoes (Rotel tomatoes would be perfect), chopped bell peppers, diced onions, and minced garlic.
  • Make it rise – Add a teaspoon of baking powder for a light and fluffy casserole.

Prep And Storage

  • Prep Ahead – You can prepare the entire corn casserole in advance and refrigerate it before baking. Another option is to mix all the dry ingredients and store them in an airtight container, then combine the wet ingredients when ready to bake.
  • Store – Store your leftover casserole in an airtight container after it cools to room temperature. It will keep well for 3-4 days in the fridge.
  • Freeze – To freeze your cornbread casserole for up to three months, put it into a freezer-safe container and place it in the freezer. Be sure to put your frozen leftovers in the fridge the night before serving for the best flavor and texture.
  • Reheat – To reheat, put it in a baking dish in the oven for 15-20 minutes at 375 degrees F / 190 degrees C. Or you can reheat a smaller portion in the microwave for 60-90 seconds.
